The Cabernet fruit was sourced from Fern Rock Vineyards located in the Spring Mountain District. Grapes were harvested on 10/12/16 at peak maturity (25.9 Brix) and destemmed and sorted at the Wine Foundry with an optical sorter to include only the best berries. The must had 30 days of skin contact with gentle pump overs and the majority of press was added back. The wine was aged in Billon and Bossuet French oak barrels for 26 months. The final blend consisted of 91.5% Cabernet Sauvignon, 4.5% Petit Verdot, 2% Malbec, 1% Cabernet Franc and 1% Merlot. Aromas of black currants and spice are matched with wild berries and dark chocolate on the palate. The wine is full bodied with a balanced mouthfeel, supple tannins, and a long, elegant finish. Bottled in 2018, it will benefit from 2-5 years of bottle aging and can be enjoyed over the next 10 to 15 years.
